Pre-Ride Fruit Snacks Pancake Topper

Pancakes are delicious. Pancakes topped with our homemade Fruit Snacks Compote are amazing. Inspired by our colorful Fruit Snacks purple, this recipe is dead simple, takes a grand total of about 15 minutes, and will turn any pre-ride Sunday breakfast up to 11. If you find yourself making this when fresh berries are out of season, frozen berries are a perfect substitute.

    INSTRUCTIONS

    1. Grab yourself a saucepan (aka, a pot) and add the berries, agave syrup, and water. Cook on medium-high heat, stirring frequently. The berries will begin to break down until they turn into a jam. This step takes about 10 minutes.

    2. Next, stir in the cinnamon. At this point, if the compote is too watery, which is common if frozen berries are in play, stir in the cornstarch and cook for an additional minute or two until the compote becomes thicker.

    3. Remove the compote from heat and allow to cool down slightly. If you're down to take it up a notch, fold in some fresh berries before topping those pancakes, waffles, French toast...whatever.
